East Boulder's Best New Places to Eat Are Hiding in Buildings You've Been Driving Past

"Due to limited parking (we're working on it, we promise!) - ride shares, biking, walking, or public transit is encouraged."

That's from the directions page of Odd Rabbit, a sushi and ramen restaurant from chefs with a Michelin-recognized track record. It sits inside an apartment complex on Arapahoe. The note is a good guide to how food arrived in East Boulder this year. None of the four best-known openings since April moved onto a main street. They went into a residential building, a life sciences office campus and a brewery space that was already there. The hours each one keeps follow the building it moved into. Read their schedules together and you can map an East Boulder day from 6 a.m. to 10 p.m.

Two kitchens in one apartment complex

The building is Weathervane, and both of its restaurants list 5863 Arapahoe as their address. Its developer, Zocalo Community Development, describes it as a 317-unit, LEED-Gold registered community with more than 12,000 square feet of commercial space. The property was still listed as "In Lease-Up" as of September. The developer calls the project "something of the impossible occurring in East Boulder," and its retail list names two tenants, Odd Rabbit and Decent Bagel.

The two tenants split the day almost evenly. Decent Bagel is the Boulder outpost of the East Coast-style bagel shop from Nederland. It's in Unit 1A, and its own site says "Open 6a-4p daily." The Daily Camera reported the expansion in late June, when there was no official opening date yet. By July 24, Axios Boulder was reporting it open.

Odd Rabbit takes over the same parking lot later in the day. Chris and Ariana Teigland opened it on April 30. It's their second restaurant, after glo Noodle House in Denver, which has a Michelin Bib Gourmand. The Boulder menu isn't a copy of the Denver one. The ramen starts from a rich chicken broth instead of the tonkotsu-style pork broth used in Denver. There are around eight nigiri, a half-dozen hand rolls, sashimi plates and a crispy rice nigiri. The small plates include chicken wings glazed in fish sauce caramel, pickled crab claws and a sourdough scallion pancake.

"It's Asian food. There's a lot of Japanese ingredients and tradition into it. But a lot of the deal was to not be stuck in a box and get to branch out a little bit." Chris Teigland, speaking to Boulder Reporting Lab

The Teiglands' first-ever double cheeseburger is on the menu too. It comes with American cheese, house pickles, cured cabbage, miso mayo and pepper jelly on a brioche bun. At opening, Boulder Reporting Lab listed dinner hours of 4 to 9 p.m. Monday through Thursday and 4 to 10 p.m. Friday and Saturday. Those are opening-period hours, so call ahead before a Sunday plan.

Because the building is residential, the logistics take a little explaining. Here's what the restaurant itself says:

  • Odd Rabbit is in the first building on your right as you turn into Weathervane, just east of Decent Bagel. The entrance is at the east end of the parking lot.
  • Park only in spaces marked "RETAIL PARKING." Street parking is also available across Arapahoe on Old Tale Road. If you park there, take the walking path to the bridge under Arapahoe to cross.
  • The bar and nine tables are held for walk-ins. Takeout isn't offered from 6 to 8 p.m. on Fridays and Saturdays.

That last point decides how a weekend night goes. A Friday dinner at Odd Rabbit means eating there or getting takeout before 6.

An office campus with a 7 a.m. coffee bar and a 7 p.m. close

You can see the same pattern in Flatiron Park, though the hours point to a different crowd. East & Co., at 2100 Central Ave., took an existing two-story office building owned by BioMed Realty and rebuilt it into a 17,000-square-foot market hall, restaurant and bar. It wasn't a light renovation. The work included removing the second-floor slab, bringing in new utilities from the street, installing a new transformer and building a commercial kitchen. Gensler handled the design and BNBuilders was the general contractor.

Boulder's Working Title Food Group, founded by Josh Dinar, developed the food concept, and EVG Hospitality runs the operation. According to BioMed Realty, the project answers demand from Flatiron Park tenants for a central place to gather. Dinar described the goal as a gathering place for East Boulder and its growing technology and health-focused workforce. Inside there's a coffee and cocktail bar, a fireplace lounge, a game room with darts, arcade games and pool, an event lawn and cabana-style seating outdoors. The market works with the Boulder County Farmers Market on seasonal produce and locally sourced products.

The grand opening was in mid-May. Axios Boulder reported hours of 7 a.m. to 7 p.m., Monday through Friday. A trade report on August 12 gave the same schedule. We couldn't confirm regular weekend service since then. Those are the hours of a campus amenity: breakfast burritos and sandwiches from the food counter, a full coffee, smoothie and juice bar for early arrivals, and closing time shortly after the workday.

The evening exceptions are on East & Co.'s community calendar. In October it lists an all-women's networking event on Tuesday, October 6, from 5:30 to 8:30 p.m., and "Mahjong 101 with Mahj Squad" on Wednesday, October 21, from 5 to 7:30 p.m. For neighbors outside the campus, those programmed nights are the easiest way in after work.

A brewery that kept the room and changed the schedule

The third building already had a taproom. Sanitas Brewing closed at 3550 Frontier Ave., and one of its co-founders opened a new brewery in the same space. That brewery is Pattern Break Brewing, which opened May 8. Its focus is hoppy beers along with a "zero alc" lineup. Batches are small, so the tap list changes often. Boulder Weekly pointed to a non-alcoholic spicy blood orange margarita and a Negroni IPA on the "mischief" menu.

Of the four places, Pattern Break keeps the longest public hours. The taproom is open 11 a.m. to 10 p.m. Monday through Saturday and 11 a.m. to 9 p.m. on Sunday. The Break, its food truck, is parked on site every day and serves the full menu from 11 a.m. to 3 p.m. and 4 to 8 p.m. That menu covers smash burgers made with Colorado regenerative beef from Western States Ranches, plus fries, salads and nachos.

There's also a weekly schedule, which neither Weathervane tenant offers:

Day What's on at Pattern Break
Tuesday Group run, 6 p.m.
Thursday Live music, 6 p.m.
Sunday Bingo, 2 p.m.
Last Sunday of the month BREAKfest, 10 a.m., with breakfast plates, beermosas, micheladas, yoga and music

The brewery publishes BREAKfest as a monthly rule, not a list of dates. Counting forward on the 2026 calendar, the last Sundays of October and November are October 25 and November 29. The page doesn't say how the 10 a.m. start fits with the usual 11 a.m. Sunday opening, so check the brewery's Instagram, @patternbreakbrewing, before going.

The week, laid out by building

Put the schedules side by side and you can see which part of the week each building covers:

Weekday morning Weekday lunch Weekday dinner Saturday Sunday
Decent Bagel Opens 6 a.m. Until 4 p.m. Closed 6 a.m. to 4 p.m. 6 a.m. to 4 p.m.
East & Co. Opens 7 a.m. Open Closes 7 p.m. No regular hours confirmed No regular hours confirmed
Pattern Break Opens 11 a.m. Food truck 11 to 3 Food truck 4 to 8, taproom until 10 11 a.m. to 10 p.m. 11 a.m. to 9 p.m.
Odd Rabbit Closed Closed 4 to 9 p.m. Mon to Thu, 4 to 10 p.m. Fri 4 to 10 p.m. Not stated at opening

The office campus covers the working day, with weekday hours that match a campus workforce. The apartment complex covers the ends of the day: bagels from 6 a.m. and dinner from 4 p.m., in two storefronts sharing one lot. The brewery covers the gaps in between, with seven-day hours and recurring events.

Saturday morning works at Decent Bagel. Saturday afternoon and evening work at Pattern Break, and Saturday dinner works at Odd Rabbit if you eat in or order before 6. Sunday evening is the open question: Pattern Break is confirmed until 9, and Odd Rabbit's opening-period hours didn't mention Sunday.

The fall weekends that test it

Two dates this fall show how this works on a weekend. Pattern Break's BREAKfest on October 25 is the earliest weekend start any of the four advertises after Decent Bagel's 6 a.m. opening. Three weeks later, the Boulder Cup returns to Valmont Bike Park on November 14 and 15 with UCI racing and amateur categories. That weekend will bring a crowd of racers and spectators to East Boulder on a Saturday and Sunday. The places to feed them will be the ones with weekend hours: Decent Bagel in the morning, Pattern Break all day, and Odd Rabbit for Saturday dinner.

East & Co. is the one to watch on that list. The building was designed for more than weekday lunch, with an event lawn, cabanas, a game room and a fireplace lounge. So far, its only after-hours programming confirmed outside weekday business hours is the evening events on its calendar.

At Valta & Co., we follow which East Boulder buildings are adding storefronts and which campus spaces are opening up to neighbors. That detail can change how a street feels from one year to the next.
